While I’m impartial to fried chicken for every meal of the day, slices of cucumber with our Nasi Lemak or chunks of pineapple in our Assam Laksa don’t suffice. It’s true, I’ve changed. 2 fruit 5 veg team! Don’t worry, the inner Australian in me isn’t seeking single origin, socially conscious, cold press, free range baked… I’m just talking about getting a little more in touch with your inner green thumb (for this week anyway!).
For those that have visited one of the BIG stores this week, you’ll know our Beets Don’t Kale My Vibe fair is on again. This year, we’re focused on showcasing the best produce from our local Malaysian growers. Honey jackfruit will be peeled fresh for you on the spot. There’s tomato, mini capsicum and dragonfruit trees. Rambutans, passionfruit, potted herbs and mushrooms have come direct from the farmers to you. And my personal favourite… truffle or chilli lime grilled corn is for sale.
The fair is in store until Sunday October 2 but in case I didn’t have you at ‘truffle’, I’ve whipped up this easy superfood breakfast to get those goodness vibes bubbling…
Dragonfruit Chia Breakfast Puddings
1 red dragonfruit, peeled and quartered
1/4 cup almond milk
6tbs chia seeds
Topping ideas: blueberries, coconut shreds, pumpkin seeds, flaked almonds, banana slices.
Blitz all the ingredients in a blender then divide between glasses. Set in the fridge for a few hours to let the chia work its magic before going nuts with toppings.
