As my love affair with Japan continues, so does my need for a quick cheats ramen recipe. The true Japanese in me knows this is definitely a fake version. Theres no seven hour long stew for the bone broth… there isn’t even bones! Basically this is a Japanese laksa, but let’s not get out the food cuisine police. Tonight’s all about quick, cheap, easy and nothing but slurpy deliciousness that goes perfectly with an early night, Netflix and most likely a moon cake.

Mushroom & Spinach Cheats Ramen
4 cups of chicken stock
4tbs teriyaki sauce
3 clove of garlic, sliced
Handful of sliced mushrooms
Handful of chopped spring onion
Handful of baby spinach
2 handfuls of cooked ramen noodles – you could always use laksa or udon

Bring the chicken stock and teriyaki sauce to the boil in a medium size pot then reduce to a very low simmer. In a pan, heat a little oil then fry off the garlic and mushrooms until tender and cooked through. Add this to the soup along with the spring onion, spinach and noodles. Oishi Oishi! Serves 2-3
