Weeknights are all about quick and easy and while I would love to eat Curry Laksa and Roti every night, I am almost positive my doctor would have a different opinion! I would also love to be on a Greek Island right about now nomming down on grilled haloumi, squeezed with lemon and cracked with pepper but let’s stop the daydreamin.

Look through the haze, past the evening traffic and feast your eyes on your kitchen. I bring you my first installment of dinner on a 20. Keep those ringos tucked away for Greece, tonight you’re stepping up quick & easy…

Greek Roasted Veg with Herby Rice
Serves 4 as a side

Ingredients
Olive oil
1 red onion
3 cloves of garlic
1 green zucchini
1 green capsicum
1tbs dried oregano
1 cup of rice
1/2 cup chopped parsley
Salt & pepper
Step things up a little – add fried haloumi!

Method
Heat your oven to 180 then roughly chop your veg. Spread evenly over a baking tray and drizzle with olive oil, salt and the oregano and bake for 20 minutes or until golden and soft. Cook your rice as per the packet instructions then stir through the chopped parsley and roasted veg. Season with salt and pepper then if using, serve with the fried haloumi. As the Greek’s would say, “Nostimo!”
